Flavors of Quebec Vichyssoise with Apple

| Ingredients for 4 servings | - 4 apples, peeled and seeded
- 4 potatoes, peeled
- 3 leeks, white part only, washed well
- 2 celery stalks
- 1 litre (4 cups) light chicken broth
- 500 ml (2 cups) milk
- salt, pepper, chives

| Method |
- Place the apples, potatoes, celery and leeks into a pot with the chicken broth; simmer for 30 minutes;
- remove the pot from the heat and let cook for ten minutes;
- add the cold milk; liquefy the mixture in a blender;
- season to taste; add the snipped chives; chill in the refrigerator;
- serve very cold; garnish with a few more chives.
