Braised Red Cabbage with Apples and Spices

René-Philippe of the Restaurant Aux Tourterelles in Ste. Adèle, Quebec offers us the flavors of fall with this recipe. This cabbage is a good accompaniment to game or red meat.

Ingredients for a 1.5 kg cabbage

1 - 1.5 kg (3 lb.) red cabbage
1 grated apple, about 200 ml (3/4 cup)
1 chopped onion, about 200 ml (3/4 cup)
125 ml (1/2 cup) brown sugar
125 ml (1/2 cup) powdered chicken stock
100 ml (6 tbsp.) white wine vinegar
100 ml (6 tbsp.) white wine
75 ml (5 tbsp.) vegetable oil
12 juniper berries, crushed fine
1/2 tsp. each: ground cinnamon, cloves, cumin
1/2 tsp. minced garlic

Method

  1. Slice the cabbage thinly; set aside;
  2. place the oil, onion, apple and spices in a large pot; sauté over medium heat without browning;
  3. add the sugar and powdered chicken stock and stir; add the wine, vinegar and cabbage; combine well; cover and reduce the heat; braise gently for about 45 minutes or until the cabbage is tender.
