Zucchini Blossom Fritters Recipe

It's essential to use really fresh squash blossoms for good results. This means this is a seasonal dish that can only be enjoyed in the summer months.

- Zucchini blossoms
- Oil for frying
Fritter batter
- 150 g (5 oz.) flour
- 250 ml (1 cup) cold milk
- 2 eggs
- Salt, pepper, parsley
Method

Making the batter

  1. In a bowl, combine the flour, milk and 2 egg yolks;
  2. beat the egg whites to stiff peaks and fold them gently into the batter;
  3. season with salt and pepper and add some finely chopped parsley.

Cooking

  1. Gently dip each zucchini flower into the batter;
  2. fry in hot oil;
  3. remove when the fritter is lightly golden.
