METHOD
- Cut the pepper into squares the same size as the veal cubes.
- Cut the onion bulbs in half, leaving on a little of the green part.
- Make the brochettes by placing the veal cubes on skewers interspersed with the bacon, pepper and onion to create a good mixture of flavors and colors.
- Finely grate the lime zest.
- Combine the olive oil and lime juice in a bowl. Season with salt and pepper. Brush this mixture over the brochettes.
- Cook the brochettes on a hot grill, turning occasionally and brushing with the lime mixture until cooked.
