Chef's Note

Tomato coulis is generally served cold as an accompaniment to vegetable dishes such as eggplant flan. It's best to make it ahead of time and refrigerate it so that the flavors have time to blend.

It can also be heated and used as a sauce for pasta.

- 1 tbsp. olive oil
- 1 clove of garlic

  2. Blend for 30 seconds until the tomatoes are liquefied;
  3. Serve cold.
