METHOD
- Soak the rice vermicelli in cold water for about an hour; drain.
- Combine the ginger, garlic, soy sauce and lime juice; toss with the vermicelli.
- Dip a rice paper wrapper into warm water until softened.
- Arrange some of the vermicelli, chicken breast and vegetables in a long band across each wrapper. Roll up tightly; wrap in plastic wrap and place in the lunch box.
CHEF'S NOTES
Spring rolls are great for lunch boxes! Just combine some nice thinly-sliced vegetables (carrot, bell pepper, cucumber) with some strips of cooked chicken. Add a fruit or peanut-based dip... and you're set!
