Spaghetti with Olive Oil and Garlic Recipe

Ingredients
Ingredients for 4 servings
- 400 g (14 oz.) spaghetti (see Pasta)
- 4 cloves of Garlic
- 1 red chili
- 2 tbsp. parsley
- 1 tbsp. fresh mint
- 100 ml (6 tbsp.) extra virgin Olive Oil
- Salt and pepper
Method
- In a large pot, bring 5 litres of water with a pinch of salt to the boil;
- put the spaghetti into the boiling water and cook until "al dente";
- meanwhile, peel the garlic cloves and chop with the red pepper;
- cook in 3 tbsp. olive oil until the garlic is golden; when the spaghetti is cooked, drain it and return to the pot;
- add in the fried garlic, the pepper, the rest of the oil, the chopped parsley and mint;
- reheat the mixture for two minutes over low heat, stirring constantly; serve immediately.
