Lemons preserved in salt are delicious and lend a distinctive flavor to numerous Moroccan dishes such as chicken or lamb tagines.
Ingredients
Method
- Quarter the lemons, but cut along only 80% of their length so they remain attached at the base;
- sprinkle evenly with salt and close up;
- pack into a glass jar; cover tightly and marinate for 2 weeks at room temperature;
- remove from the jar and drain; cut into quarters and use as indicated in your recipe.
