Chef's Note
Lemons preserved in salt are delicious and lend a distinctive flavor to numerous Moroccan dishes such as chicken or lamb tagines.

- 8 Lemons
- 4 tsp. salt
Method
  1. Quarter the lemons, but cut along only 80% of their length so they remain attached at the base;
  2. sprinkle evenly with salt and close up;
  3. pack into a glass jar; cover tightly and marinate for 2 weeks at room temperature;
  4. remove from the jar and drain; cut into quarters and use as indicated in your recipe.
