Maple Ricotta Spread Recipe

Chef's Note

Spread on toast, pancakes, waffles, bagels, croissants, etc., or simply enjoy with fruit.

Ingredients
- 1/2 packet unflavored gelatin
- 1 egg white
- 80 ml (1/3 cup) maple syrup
- 250 ml (1 cup) ricotta cheese
- 1/4 tsp. ground ginger
Method
  1. Soften the gelatin in a little water according to package directions.
  2. Beat the egg white to stiff peaks with the maple syrup.
  3. Gently fold in the ricotta, dissolved gelatin and ginger.
  4. Refrigerate at least 2 hours before serving.
