Rice with Pineapple - Khao phad sapparod Recipe

Chef's Note
Very decorative, this dish can be served in a large hollowed out pineapple for 2-4 persons or in small individual pineapples or a medium pineapple, cut in half.
Garnish with slices of cucumber, cilantro leaves and sliced red pepper.
Ingredients
- 300 g (10 oz.) chicken
- 150 g (5 oz.) York ham
- 3 shallots, chopped
- 1 ripe Pineapple
- 1 red pepper
- 2 tbsp. oil
- 1 liter (4 cups) cooked long-grain Rice
- 4 tbsp. soy sauce
Method
- Cut the pineapple in quarters lengthwise or in half for 2 servings; hollow out;
- dice half the pineapple flesh, removing the rest for another use;
- dice the chicken and ham;
- heat the oil in a wok; add the shallot and brown slightly; remove and set aside;
- pat the chicken dry with paper towel; stir fry in the wok for a few minutes;
- add the cooked rice, ham and soy sauce; cook for 3 minutes;
- add the diced pineapple and cook for 3 minutes more;
- meanwhile, heat the pineapple boats or hollowed out pineapple in the oven or microwave;
- fill the pineapple; garnish and serve hot.
