METHOD
- Beat the egg yolks with the sugar and vanilla sugar until pale and light;
- gradually blend in the flour and cream; thicken by cooking over simmering water in a double boiler, without boiling;
- pour the mixture into a baking dish or individual ramekins; chill.
How to caramelize the crème brûlée
- Sprinkle each ramekin with a spoonful of sugar;
- Use a “caramelizing iron” or place the ramekins on the highest oven rack under the broiler and caramelize the sugar at high heat.
