Ram’s Testicles in Honey Sauce with Sweet Potato Chips Recipe

Ingredients
Ingredients for 2 servings
- 4 ram's testicles, prepared
- 2 tsp. mild chili powder
- 1/2 tsp. cinnamon
- 1 tsp. Cumin
- 1 tbsp. flower honey
- 150 g (5 oz.) butter
- 1 nice Sweet Potato
- Oil for frying
- Salt
Method
  1. Toss the ram’s testicles gently in salt without crushing them and rinse in fresh water.
  2. Rinse several times, then slice into strips and drain on paper towel.
  3. Meanwhile, peel the sweet potato and slice thinly – use a mandolin to save time.
  4. Heat the frying oil in a skillet and cook the sweet potato slices until crispy. Drain and place on paper towels. Salt and set aside.
  5. Melt the butter in a skillet and add the spices (paprika, cinnamon, cumin), stirring with a spatula to blend the ingredients well.
  6. Add the sliced ram’s testicles and cook for a few minutes before adding the honey. Cook over high heat for several minutes.
  7. Remove the ram’s testicles and keep hot.
  8. Make the sauce: reduce the cooking juices to form a sweet, slightly-thickened sauce.
  9. Serve the ram’s testicles with the sweet potato chips and spoon the sauce over top.
