Pork Colombo Recipe

Ingredients
Ingredients for 4 servings
- 800 g (1 lb. 12 oz.) Pork
- 1 Zucchini
- 3 potatoes
- 1 green mango
- 7 cloves of garlic
- 4 scallions
- 5 sprigs of parsley
- 2 chili peppers
- 1 sprig of thyme
- 1 onion
- A pinch each of coriander and anise
- 2 tbsp. garam masala or Colombo Powder
- A pinch of ground cloves
- Juice of 1 lemon
- Vinegar, oil
- Salt and pepper
Method
- Cut the pork into pieces and season with salt, pepper, 5 cloves of crushed garlic, 1 chopped chili pepper, the cloves and a little vinegar.
- Marinate for about 30 minutes.
- Chop the chives, onion, parsley and remaining garlic finely. Sauté briefly in the oil, adding the coriander, anise and thyme, then the meat and the chopped mango. Let the meat brown, then add the second chili.
- Cut the eggplant, zucchini and peeled potatoes into pieces. Add them to the pot with the massalé or colombo powder combined with a little water.
- Cover with water and cook covered for about 50 minutes, stirring occasionally. Correct the seasoning.
- Five minutes before serving, squeeze the juice of a lemon over top.
