Pop Chicken Salad Recipe

Ingredients
For 4 servings

- 2 chicken breasts
- 1 head of curly leaf lettuce
- 70 g (3 oz.) walnuts
- 1 apple
- 10 radishes
- 8 nasturtium flowers (optional)
- Juice of half a lemon
- Salt, pepper, 5 peppercorn blend

Dressing
- 2 tbsp. sunflower oil
- 2 tbsp. walnut oil
- 2 tbsp. olive oil
- 1 tbsp. wine vinegar
- 1 tbsp. sherry vinegar
- Salt and pepper
Method
  1. Slice the chicken breasts into thin strips and steam for 20 minutes.
  2. Season with salt and pepper.
  3. Wash and dice the apple. Toss with lemon juice to prevent from browning.
  4. Coarsely chop the walnuts and slice the radishes.
  5. Wash and dry the lettuce.
  6. For the dressing, emulsify the oils and vinegars. Season with salt and pepper.
  7. Pour the dressing over the lettuce; add the radish, apple and walnuts. Toss well. Place into salad bowls.
  8. Place the cooled chicken slices on the salad and garnish with nasturtium flowers.
