Truffles from Périgord have long added a noble touch to sauces, the most famous of which is undoubtedly Périgueux sauce. This sauce, made with Madeira and enhanced with diced or chopped truffle, is served on meat, poultry, game and canapés. It's a multi-purpose sauce that goes well with many dishes.
