METHOD
- Combine all the dry ingredients in a bowl.
- Cream the butter and honey with a whisk or electric mixer.
- Gradually whisk in the egg, orange juice and zest; mix in the dry ingredients little by little.
- Spoon into greased or paper-lined muffin tins; bake in a 180° C (350° F) oven for 25-30 minutes. Check for doneness with a skewer or the tip of a knife.
Honey and Orange Butter
Combine all the ingredients and serve on the side.

Lunch Box Idea
Use these orange muffins instead of sandwich bread. Halve them and fill with Gruyère or Swiss cheese. Add an apple, some grapes and a carton of milk for a well-balanced meal.
