Ingredients
Ingredients for about 200 cookies
- 300 g (10 oz.) margarine
- 300 g (10 oz.) sugar
- 3 eggs
- 250 g (9 oz.) Molasses
- 2 tsp. ground Cinnamon
- 2 tsp. ground Ginger
- 2 tsp. ground Clou de girofle
- 1 tbsp. bitter orange zest
- About 1 kg (2 1/4 lb.) flour
- 3 tsp. baking soda
Method
- Bring the molasses and spices to a boil; add the margarine and beat the mixture until cool;
- in another bowl, beat the eggs together with the sugar;
- combine the baking soda with part of the flour and add to the margarine-molasses mixture; add the beaten eggs and the remaining flour; do not overwork the dough;
- cover the dough with plastic wrap and let rest overnight in a cool place;
- using a rolling pin, roll the dough out and cut out into cookies; place them on a greased baking sheet;
- bake until lightly browned.
