New Potatoes with Chive Cream and Ham
125 g (1/2 cup) heavy cream
2 tbsp. chives
1 package of lamb's lettuce
1 small basket of cherry tomatoes
8 slices of uncooked cured ham (such as prosciutto)
Preheat oven at 160° C (300° F)
Preparation time: 10 minutes

Ingredients for 4 servings
800 g (1 3/4 lb.) new potatoes
125 g (1/2 cup) heavy cream
2 tbsp. chives
1 package of lamb's lettuce
1 small basket of cherry tomatoes
8 slices of uncooked cured ham (such as prosciutto)
Method
- Quarter the potatoes. Cover with cold salted water and cook for about 20 minutes. Drain the potatoes, remove the skins and cool to lukewarm in a bowl. Add the cream, chives, salt and pepper.
- Roll up the slices of ham into cones and place two on each plate. Divide the potatoes among the cones and on the plates.
- Sprinkle with bunches of lamb's lettuce and quartered cherry tomatoes. Serve warm.
