Chef's Note
Mirabelle plum sorbet pairs well with tea. Serve it, for example, in a dessert coupe with iced tea and some maple syrup. A sorbet flavored with mirabelle eau-de-vie would be delicious with a flambéed tart or roasted pears.
Ingredients
Ingredients for 4 servings
- 1 kg (2 1/4 lb.) Mirabelle or Yellow Plums
- 2 tbsp. plum or mirabelle eau-de-vie
Method
- Wash and pit the mirabelle plums. Cook them in a microwave.
- Place the plum compote, eau-de-vie and lemon juice into a blender container. Liquefy and pour into a sorbet maker to freeze.
