Mirabelle Plum Macaroons Recipe

Ingredients
For 4 servings
- 4 large prepared macaroons
- 250 g (9 oz.) Mirabelle or Yellow Plums, cooked to a compote
- Pastry cream (optional)
- Pistachios (optional)
Method
- Cut the macaroons in half horizontally.
- Place the lightly cooked mirabelle compote on the macaroon bottoms, either alone or on a layer of pastry cream.
- Place the top halves of the macaroons on top and garnish with a whole mirabelle plum and a few crushed pistachios.
