- 2 kg (4 1/2 lb.) Chicken
- 3 tbsp. flour
- 2 tsp. paprika
- 1/2 tsp. nutmeg
- 125 ml (1/2 cup) butter
- 250 ml (1 cup) Maple Syrup
Method
- Combine the flour, paprika, pepper and nutmeg; coat the chicken with this mixture;
- heat some butter in a Dutch oven. Brown the chicken on all sides and remove it;
- deglaze the pan with maple syrup;
- return the chicken to the sauce and add a little hot water;
- place into a 180° C (350° F) oven and cook for about 2 1/2 hours, uncovered;
- baste the chicken several times, turning occasionally.
