Macaroni with cream - Maccheroni al crema Recipe

- 400 g (14 oz.) macaroni (see Pasta)
- 200 g (7 oz.) cottage cheese
- 125 ml (1/2 cup) grated Pecorino Romano
- 125 ml (1/2 cup) Cream
- 2 egg yolks
- 30 g (2 tbsp.) butter
- A pinch of Saffron
- A pinch of paprika
- Salt and pepper
Method
  1. In a glass, soak the threads of saffron in a few drops of hot water; set aside;
  2. cook the macaroni in boiling water with a pinch of salt; drain;
  3. in a tureen or serving dish, combine the cottage cheese, Pecorino, paprika and saffron; add the beaten egg yolks; combine well, then add the cooked macaroni;
  4. in a small saucepan, heat the cream over low heat; add the butter and let melt; pour over the macaroni;
  5. season with salt and pepper; serve immediately.
