Lobster Roasted in Passion Fruit Butter Recipe

- 1 langouste (Caribbean Langoustine, scampi or Dublin Bay Prawn), 800 g / 1 3/4 lb.
- 100 ml (6 tbsp.) white vinegar
- 100 ml (6 tbsp.) dry white wine
- 150 g (5 oz.) butter
- 50 ml (3 tbsp.) oil
- Salt and pepper
Method
  1. Bring the vinegar and wine to a boil, add the passion fruit pulp and reduce by half over low heat. Season.
  2. Cube the butter and add to the fruit mixture, whisking constantly until mixture boils. Remove from heat, strain and set aside.
  3. Halve the lobster, clean, season lightly, drizzle with oil and roast in the oven at high heat. When done, remove from the oven and pour the sauce over lobster.
  4. Serve hot. Accompany with Creole rice.
