Lamb's Lettuce, Pear and Curry Soup Recipe

Ingredients
Ingredients for 4 servings
- 1 clove of garlic
- 1 small onion
- 250 g (9 oz.) Mache (Lamb's Lettuce) (1 1/2 baskets)
- 250 g (9 oz.) potato
- 2 Pears
- 750 ml (3 cups) water
- 50 ml (3 tbsp.) light cream
- 2 pinches of Curry
- Salt and pepper
Method
- In a saucepan in a mixture of olive oil and sunflower oil, sauté the coarsely chopped onion and crushed garlic over low heat. Cook until the onion is translucent.
- Add the lamb's lettuce (mache), peeled and cubed potatoes, seeded pears and water. Simmer over medium heat for 20 minutes.
- Add the cream and curry. Remove from the heat, season with salt to taste and blend until smooth.
