METHOD
- In a bowl, dissolve the yeast in the warm water;
- on a work surface, form the flour into a well; add the salt, sugar, oil and water and yeast mixture into the centre; gradually blend in enough flour to form a smooth dough;
- knead the dough until firm and elastic; form into a ball and cover with a damp cloth; let rise for two hours in a warm draft-free place; the dough is ready when it comes away easily from the bowl and does not stick to your fingers;
- once the dough has doubled in volume, press it into a pizza pan or baking sheet;
- top the pizza as desired, add a sprinkling of olive oil and let rest 5 minutes;
- bake at 200° C (400° F) for 20 minutes; serve hot.
