Cooking time: 1 hour 40 minutes
Difficulty: Easy
Chef's Note

Garbure is a thick soup or stew containing meat, beans, cabbage, etc., depending on the region. This version uses the famous white beans from Tarbe.  Hint: It's even better reheated!

Ingredients
Ingredients for 6 servings
- 200 g (7 oz.) dry White Bean or White Kidney Beans (preferably Tarbe beans)
- 1 large onion
- 2 carrots
- 2 turnips
- 1 leek
- 2 cloves of garlic, chopped
- 3 potatoes
- 1/2 tender green cabbage
- 1 slice of bacon
- 1 piece of dry ham
- 1 tbsp. goose fat
- Salt and pepper
Method
  1. Dice the vegetables. In a large pot, sweat the carrot, onion, turnip and leek in goose fat. Add 2 liters (8 cups) lightly salted water.
  2. Add the ham and bouquet garni. Cook gently for 1 hour.
  3. Add the cabbage and potatoes. Simmer for 30 minutes. Remove the bouquet garni and ham.
  4. Season and add the cooked white beans. Add the chopped garlic and bacon. Boil briefly before serving.
