Garbure with White Beans Recipe

Chef's Note
Garbure is a thick soup or stew containing meat, beans, cabbage, etc., depending on the region. This version uses the famous white beans from Tarbe. Hint: It's even better reheated!
Ingredients
Ingredients for 6 servings
- 200 g (7 oz.) dry White Bean or White Kidney Beans (preferably Tarbe beans)
- 1 large onion
- 2 carrots
- 2 turnips
- 1 leek
- 2 cloves of garlic, chopped
- 3 potatoes
- 1/2 tender green cabbage
- 1 slice of bacon
- 1 piece of dry ham
- 1 tbsp. goose fat
- Salt and pepper
Method
- Dice the vegetables. In a large pot, sweat the carrot, onion, turnip and leek in goose fat. Add 2 liters (8 cups) lightly salted water.
- Add the ham and bouquet garni. Cook gently for 1 hour.
- Add the cabbage and potatoes. Simmer for 30 minutes. Remove the bouquet garni and ham.
- Season and add the cooked white beans. Add the chopped garlic and bacon. Boil briefly before serving.
