Futari, West African Vegetable Stew Recipe

Chef's Note

This is a flavorful combination of squash and yams - staple foods throughout Africa - and coconut milk.

This recipe is best made with a sweet pumpkin or Hubbard squash.

Ingredients

- 500 g (18 oz.) peeled diced Winter Squash
- 500 g (18 oz.) peeled dice Yam or sweet potato
- 250 ml (1 cup) Coconut Milk
- 1 onion, thinly sliced
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- Oil
- Salt
Method
  1. Sweat the onion in a saucepan in a little oil until translucent; 
  2. add all the other ingredients; bring the liquid to the boil; reduce the heat; simmer, covered, stirring occasionally until the vegetables are cooked.
