Wine-Simmered Fruit Stuffing (Turkey) Recipe

Ingredients
For a 14 pound turkey
- 10 oatmeal bread slices, (about 16 ounces), cut into 1/2-inch pieces (8 cups)
- 250 ml / 1 cup chardonnay wine
- 1 large Granny Smith apple, cut into 1/2-inch chunks
- 125 ml / 1/2 cup chopped dried apricots
- 125 ml / 1/2 cup golden raisins
- 125 ml pitted cherries
- 2 tablespoons butter or margarine
- 1 large onion, chopped (about 1 cup)
- 1 cup chopped celery
- 1/2 cup coarsely chopped pecans, toasted
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 1-1/2 cups chicken broth
Method
- Preheat oven to 325° F. Spread bread pieces onto bottom of large shallow baking pan. Bake 20 to 30 minutes, or until lightly browned and dried, stirring occasionally.
- During this time, place wine, apples, apricots, cherries and raisins in medium saucepan; heat to a boil over high heat. Reduce heat and simmer 5 minutes, or until wine is early absorbed. Remove from heat; cool slightly.
- Melt butter or margarine in large skillet over medium heat. Add onion and celery; cook and stir 8 minutes, or until vegetables are tender. Remove from heat. Add fruit mixture, pecans, salt and pepper to skillet; stir to combine. Place mixture in large bowl. Add bread pieces and broth; mix well.
- Fill neck and body cavity completely with stuffing. Cook as usual.
