METHOD
- Place the flour on a work surface; make a well in the centre and pour in the oil and the eggs;
- mix all the ingredients with a spatula or with your hands; if the dough is too stiff, add a few drops of water;
- if you have a pasta machine, put the dough through the roller 4 or 5 times to obtain a thin length of pasta; otherwise, flour your work surface and roll the dough out as thinly as possible;
- let rest one hour;
- roll the pasta up lengthwise; using a very sharp knife, cut the pasta into slices not more than 2 mm wide;
- put the tagliatelle into boiling water to which a spoonful of salt has been added; cook for 5-6 minutes;
- remove and season to taste with oil and spices or sauce.
