Finnish Rice Pudding Recipe

Chef's Note
It is said that whoever finds the almond in the pudding will receive happiness.
Unlike similar dishes from other countries, sugar isn't added to the mixture but sprinkled on top just before serving. Instead of sugar, you could top the pudding with jam.
Ingredients
Ingredients for 10 servings
- 500 ml (2 cups) water
- 1.5 liters (6 cups) milk
- 300 ml (1 1/4 cup) rice
- 1 1/2 tsp. salt
- 1 peeled almond
- Cinnamon and sugar to taste
Method
- Combine the water and milk in a saucepan and bring to a boil; add the rice;
- let simmer over very low heat until completely cooked (about 20 minutes); add the salt and the almond;
- serve with cinnamon, sugar and milk.
