METHOD
- Remove the outer leaves and the bitter core from the endives. Halve the endives lengthwise.
- Zest and juice the orange.
- Melt the butter in a large skillet over low heat. Add the sugar, mix and allow to caramelize. Mix in the orange juice and zests.
- Place the endives in the skillet, cut side down. Cover and simmer for 20 minutes over low heat.
- Just before serving, place 2 endive halves on each plate and crumble a carré frais over each. Add a grinding of pepper and drizzle on some of the orange sauce.
