Citrus Sauce, Vinaigrette and Marinade Recipe

These recipes are easy to prepare. They're refreshing and can be used in countless ways!

Method
Making the sauce
It can be used on mild salad greens, cold chicken or the Langoustine Strudels
- start preferably with homemade mayonnaise;
- thin it with citrus juice until it reaches the consistency of a sauce;
- add a pinch of salt and some of the grated zest of the citrus used for the juice.
Making the vinaigrette
For salad, crudités, etc.
- combine 1 part citrus juice with 1 part olive oil;
- add or 1 or 2 tbsp. balsamic vinegar;
- mix in some chopped lemon balm.
Making the marinade
For grilled chicken, Tuna Tartar, etc.
- prepare the citrus juice as described below;
- add some chopped chives and a little olive oil.
- use 2 parts orange juice (which is naturally sweet)
- to 1 part sour juice (a mixture of lemon, lime and grapefruit juice)
