Lobster Spring Rolls
Ingredients
- 250 ml (1 cup) vegetable oil or vegetable oil and olive oil
- 1 bunch of fresh Coriander or Cilantro
Method
  1. Drop the cilantro into boiling water for a few seconds and refresh in ice water.
  2. Squeeze the blanched cilantro dry.
  3. In a high speed blender, blend the oil and cilantro together for 30 seconds, strain through a fine sieve.
