Preparation time: a few minutes
Cooking time: 1 hour 

1. Wash the beets well to remove any soil. 
2. Cook, unpeeled, in boiling water for 40-60 minutes, depending on size. The beets are cooked when very tender. The skins can then be pulled off very easily, without the need of a knife. 
3. Cut the beets into sticks and sauté in butter with a drizzle of honey and a handful of cranberries.
