METHOD
- In a small saucepan, bring the milk to a boil with the lavender flowers; remove from the heat and infuse to taste.
- Strain the flavored milk, pressing well on the lavender flowers with the back of a spoon.
- Chop the chocolate into pieces; melt in a double boiler with 6 tbsp. infused milk.
- Off the heat, blend the egg yolks into the chocolate mixture and combine well.
- Beat the egg whites to stiff peaks, adding the sugar during the final stage. Using a sptaula, gently fold the beaten whites into the chocolate mixture without deflating them.
- Pour the chocolate mousse into small ramekins and refrigerate for at least 6 hours.
- Serve with strawberries or other fresh fruit.

This recipe came to us, not from Provence, but from Bleu Lavande in Quebec's Eastern Townships, in the form of a big basket of lavender products. The owners have learned to turn their harvest into countless products: infusions, jellies, chocolates... This is where you can get lavender to add a ray of sunshine to your cooking.
