Chicken with Sultanas and Melon Balls Recipe

Ingredients
Ingredients for 2 servings
- 2 boneless Chicken thighs
- A pinch of salt and 3 grinds of pepper
- 15 ml (1 tbsp.) oil
- 15 ml (1 tbsp.) honey vinegar or other light-colored vinegar
- 250 ml (1 cup) chicken stock
- 15 ml (1 tbsp.) cedar jelly
- or liquid honey
- 15 ml (1 tbsp.) sultanas (see Grapes)
- 90 g (3 oz.) butter
- A few Melon balls (cantaloupe)
- (cut out with a Parisian scoop or melon baller)
Method
  1. Season the chicken thighs with salt and pepper;
  2. in a sauté pan, cook the chicken in the hot oil until it colours; remove from the pan and set aside;
  3. remove the fat from the pan; return the pan to the heat;
  4. deglaze with the vinegar and boil for 5 seconds; add the chicken stock;
  5. return the chicken to the pan; add the cedar jelly or honey and the sultanas;
  6. cook the chicken, turning it half way through;
  7. five minutes before serving, add the melon balls;
  8. serve hot with tri-color fettuccine.
