METHOD
- In a large cocotte or Dutch oven, heat the oil; add the chicken, onion, garlic, ginger, chili and cumin; cover and cook over low heat for 15 minutes, stirring occasionally;
- blend the flour with a little cold water; add to the ingredients with the rest of the water; combine well and bring to a boil;
- cover and cook 45 minutes longer, stirring occasionally;
- add the olives, mint and lemon juice and let the flavors absorb for 15 minutes. Serve the chicken with the sauce.
