Carrot Gratin Recipe

Chef's Note
Gratins, dishes baked until they have a deliciously browned surface, are a special part of the Finnish Christmas meal. Moreover, they are extremely practical for the cook since they can be made ahead of time; in fact their flavour improves when they are reheated.
Tip: keeps well in a cool place for two to three days
Ingredients
Dor 10 servings
- 200 ml (3/4 cup) rice
- 400 ml (1 1/2 cups) water
- 120 ml (1/2 cup) milk
- 3 tsp. salt
- 1.5 kg (3 lb.) carrots
- 200 ml (3/4 cup) milk or milk and cream
- 50 g (3 tbsp.) butter
- 3 eggs
- 1 tsp. grated nutmeg
- 1 tbsp. sugar
- 2 tsp. salt
- Butter and breadcrumbs to gratiné
Method
- Bring the water and 120 ml of milk to a boil and add the rice; cook until the mixture begins to thicken slightly;
- peel and grate the carrots;
- add the grated carrots, 200 ml of milk, melted butter, eggs and seasonings to the rice;
- pour the mixture into a buttered baking dish; sprinkle with the bread crumbs and dot with butter. Bake in a preheated 180° C (350° F) oven until nicely browned on top, about 70 minutes.
