Christmas red cabbage with Ribera del Duero red wine Recipe

Red cabbage needs no introduction. This festively-attired winter vegetable appears on numerous Christmas menus, simply boiled, then sautéed with garlic. In our recipe, the combination of pine nuts and raisins and the Ribera del Duero wine add more flavor and subtlety to this brilliantly colored vegetable. Together with the cabbage, they form a happy alliance on the Catalan table.
Ingredients
- 1 red cabbage, approximately 1 kg (2 1/4 lb.)
- 250 ml (1 cup) young Ribera del Duero red wine
- 4 tbsp. extra-virgin olive oil
- 75 g (3 oz.) raisins
- 75 g (3 oz.) pine nuts
- Salt and pepper
Method
- Soak the raisins in the red wine.
- Cut the red cabbage into thin strips and wash it.
- Heat the oil in a Dutch oven, then sauté the pine nuts for a few moments.
- Add the red cabbage and sauté for 30 seconds.
- Pour the red wine and raisins over the cabbage mixture.
- Season with salt and pepper.
- Cover the pot as tightly as possible and cook for an hour over low heat.
