Blueberry Fritters Recipe

This recipe comes to us from the Odawa tribe of the Wilwimikong Indian Reserve on Ontario's Manitoulin Island.

These fritters are served with mint tea or a bark infusion.  

Ingredients
Ingredients
- 1.25 liter (5 cups) all-purpose flour
- 400 ml (1 1/2 cups) blueberries (Bilberry or Blueberry)
- 4 tbsp. baking powder
- 6 eggs, beaten
- Corn, sunflower or other vegetable oil for frying
Method
  1. combine the dry ingredients in a bowl; 
  2. press the blueberries lightly to obtain about 125 ml (1/2 cup) juice; beat the eggs with the juice until creamy; 
  3. blend the egg-juice mixture and blueberries into the dry ingredients; 
  4. drop balls of the batter into hot oil and fry until golden brown; drain and serve hot.
