Beaufort Cheese Tart Recipe

Ingredients
For 8 servings
For the pastry
- 250 g (8 oz.) flour
- 125 g (4 oz.) butter
- Salt
- 1/2 glass of water
For the filling
- 100 g (3 1/2 oz.) Beaufort cheese, cut into thin strips
- 200 ml (3/4 cup) crème fraîche
- 1 glass of milk
- 3 eggs
- Nutmeg, salt and pepper
Method
- Prepare the pie pastry (pâte brisée) by combining the flour, butter, water and 1/2 tsp. salt. Roll out the pastry.
- Line a buttered tart mold or pie plate with the pastry; prick with a fork and weight down; bake, unfilled, in a hot oven until lightly browned.
- Whisk the crème fraîche with the eggs and milk in a bowl.
- Add a little grated nutmeg and the Beaufort cheese; mix well and pour into the prepared pie crust.
- Bake for 30 to 35 minutes in a hot oven. Serve hot with a red or white Savoie wine.
