A regional specialty from the Basque Country.
Sautéed chicken pieces are served with a tomato, onion, chili and white wine-based sauce. This dish is sometimes a bit spicy, but always delicious. Serve hot, accompanied by steamed or gaufrette potatoes.
Ingredients
Ingredients for 4 servings
- 1 Chicken, about 1.4 kg (3 lb.)
- 50 g (3 tbsp.) butter
- 2 tbsp. oil
- 5 green peppers, cut into strips
- 250 ml (1 cup) dry white wine
- 125 ml (1/2 cup) cognac
- 1 onion
- 150 g ( 5 oz.) Bayonne Ham
- 150 g (5 oz.) sausages (optional)
- 3 crushed tomatoes
- A pinch of Espelette Chili
- Salt and pepper
Method
- Cut up the chicken; season with salt and pepper; sauté in the butter and oil; drain and set aside;
- in the same skillet sauté the ham (and sausage, if using); drain and set aside;
- in the same skillet, sauté the onion and peppers;
- after five minutes, deglaze with the cognac and white wine; return the chicken and ham to the skillet and add the tomatoes, salt and pepper;
- cover and simmer over low heat for 20 minutes;
- adjust the seasoning and serve hot.
