METHOD
- Heat 2 tbsp. oil in an ovenproof casserole or small Dutch oven; sauté the onions until lightly colored; remove and set aside;
- add another spoonful of oil and sauté the peppers; set aside;
- preheat the oven to moderate;
- to the same pan (still containing a little oil) add the onions and tomatoes;
- place the cod on top of the vegetables; arrange the peppers all around;
- season with salt and pepper and add the thyme and bay leaf;
- drizzle with the remaining oil, white wine and 30 ml (2 tbsp.) water;
- cover and place in the oven for approximately one hour; serve in the casserole.

CHEF'S NOTES
This cod recipe from the Basque country is very simple and uses fresh garden ingredients. If you're short of time, cut the cod into large slices and lay them flat on the onions: you'll cut the cooking time in half.
