METHOD
- Peel the potatoes and cook for 20 minutes in salted water.
- Drain, cool and slice.
- Sweat the onion in a little oil in a skillet.
- Add the lardons and brown slightly.
- Pour the cream into a bowl, add the white wine, garlic, pepper and nutmeg. Mix.
- Place a layer of potatoes into a rectangular baking dish or 4 individual dishes.
- Pour on half the lardon and onion mixture.
- Slice the munster and lay on top.
- Repeat the layering – potatoes, lardon, onion and munster slices.
- Then pour on the cream and wine mixture.
- Sprinkle with cumin and bake in the oven for 30 minutes.
CHEF'S NOTES
You can make the gratin with or without cheese. In Alsace, the cheese is mandatory and they use Munster but you can travel – use Reblochon like being in Savoy, or Livarot like being in Normandy… It’s a matter of taste.
