- 500 ml (2 cups) Maple Syrup
- 1 tbsp. corn syrup
- 175 ml (3/4 cup) Light cream
- 1 tsp. vanilla
- 175 ml (3/4 cup) chopped nuts (optional)
Method
- put the maple syrup, corn syrup and cream into a heavy saucepan and boil without stirring until it reaches 117° C (234° F), or soft ball stage;
- cool to 50° C (100° F) and begin stirring until the mixture thickens;
- add the vanilla and walnuts;
- pour into a buttered dish;
- let cool and cut into squares.
