METHOD
- Dissolve the yeast in half the water (300 ml - 1 1/4 cup).
- Add the flour and the remaing water. Let rest for 15 minutes in a warm draft-free place.
- Knead the dough for 1-2 minutes. Add the salt. Continue kneading for 10 minutes until the dough is slightly sticky but comes away from your fingers.
- Form the loaves as desired: this quantity of dough will make 2 country loaves, 5 baguettes or 40 rolls.
- Let the bread rise for 30 minutes.
- Meanwhile, preheat the oven to 220-230° C (450° F). Place a container of water in the oven and spray the sides of the oven with water before placing the bread in. The baking time will depend on the kind of loaf: 20-35 minutes for country bread, 20-25 minutes for baguettes and 15-20 minutes for individual rolls.
- Remove the bread and cool on a rack.
