METHOD
- combine the flour, baking powder and salt; add the coconut, sugar, vanilla and eggs and mix well;
- gradually add the milk, mixing to form a firm but not sticky dough;
- knead for a few minutes; form into 2 loaves and place into greased bread pans;
- sprinkle the tops with a little sugar and bake in a 180° F (350° F) oven for about 1 hour or until golden brown;
- serve warm or cold.
CHEF'S NOTES
This bread is very popular in Barbados and can be served with afternoon tea or with a chicken and fruit salad for a light meal.
