METHOD
- Place the water, butter and lemon zest into a saucepan; bring to a boil; reduce the heat;
- add the flour, stirring continuously until smooth;
- remove the saucepan from the heat; let rest and cool;
- beat in the eggs, two at a time, with a spatula or mixer; the batter should have a fairly thick consistency;
- grease a baking sheet; place the batter into a piping bag and pipe out small balls;
- bake in the oven until puffed and golden; remove from the oven; let cool; fill with sweetened whipped cream just before serving;
- melt some bittersweet chocolate; serve on the side.

A traditional recipe, as presented by Senhor Dantas, owner of the Restaurant Regional in Sintra, Portugal
French King Henri IV had, among his favorites, a mistress by the name of Profiterole. To please her, he invented an airy pastry filled with whipped cream and drizzled with hot chocolate sauce. These days, the pastry is often filled with vanilla ice cream and frozen, though this is not the authentic version.
