Buying sage
Choose sage with a firm stem and straight branches, with no yellowing or softness.
Storing
It can be kept easily for a week in a plastic bag in the lower part of the refrigerator.
In oil: Place the sage leaves in a container and cover with oil.
Pineapple sage
Salvia rutilans. Syn. Salvia elegans, Scarlet pineapple.
As its name suggests, it has a pineapple-like flavor. It's a wonderful shrub with striking red flowers that blooms from late summer until the first frosts. In the kitchen, the leaves add a fresh flavor and can be used in desserts (ice creams, sorbets, fruit salads) and to flavor iced tea.
