Light thick cream
A kind of cream sold in Quebec. It is pasteurized light thick cream that contains only between 12 and 30% butterfat while having the consistency of heavy (35% butterfat) cream.
When cold, it's excellent for pouring over fresh fruit or desserts... naturally!
Hot, it's good for adding at the end of cooking since its texture requires little cooking time. It stands up to the addition of wine and liquour without curdling.
It can be whipped.
It enhances the flavor of pasta, quiche, salads and sauces.
